CRUST:
1 1/4 c. all-purpose flour
1 c. old-fashioned oats
2 c. flaked coconut
1/2 teaspoon salt
3/4 c. brown sugar
1 c. butter softened
1 egg lightly beaten
12 ounces semi-sweet chocolate chips
FILLING:
14 ounces sweetened condensed milk
1/4 c. Karo® Light Corn Syrup
8 ounces toffee bits
How to make Coconut Toffee Chocolate Chip Cookie Bars
Step 1: Prepare the oven. Preheat it to 350 degrees F.
CRUST:
Step 1: In a large bowl of an electric mixer, combine the flour, oats, coconut, and brown sugar. Beat at low speed.
Step 2: To the bowl, add the butter and beat until a crumbly dough forms. Beat in the eggs, then fold in the chocolate chips.
Step 3: For the topping, reserve about 1 1/2 cups of dough. Into the bottom of a lightly greased 13 x 9-inch baking dish, press the rest of the dough.
Step 4: Place inside the preheated oven and bake for about 10 minutes.
FILLING:
Step 1: In a small bowl, combine the sweetened condensed milk and corn syrup. Pour this evenly on top of the hot crust, sprinkle with toffee bits, and evenly top with the reserved crust mixture.
Step 2: Place back in the oven and bake for another 25 to 30 minutes until golden brown.
Step 3: Remove from the oven and allow to cool before cutting into bars.
