4 bone-in pork chops
1 tablespoon Dijon mustard
1 teaspoon granulated garlic
1 teaspoon granulated onion
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1/2 teaspoon cayenne pepper plus more to taste
4 bacon strips
1/2 c. vegetable oil
1/2 c. all-purpose flour
How to make Classic Southern Fried Pork Chops
Step 1: Place the granulated garlic, onion, salt, black pepper, and cayenne pepper in a small bowl. Whisk well until combined.
Step 2: Using a paper towel, pat the pork chops dry. Rub the Dijon mustard using your hands on the entire pork chops. Sprinkle with the spice mix, evenly rubbing it on each side of the chops.
Step 3: Now, dredge both sides of the chops in flour. Set aside.
Step 4: Over medium-high heat, preheat a large (about 12 to 13-inch) heavy frying pan preferably a cast-iron. Add the strips of bacon to the pan and fry both sides until crisp and the grease has rendered out. When done, take the bacon off the pan, reserving the bacon grease.
Step 5: In the pan, warm the vegetable oil to about 325 degrees F.
Step 6: In the flour, dredge the chops again, covering all sides very well. Add the chops to the frying pan and cook each side for about 4 to 5 minutes over medium heat until deep golden brown and the internal temperature of the meat is 145 degrees F. Note that the cooking time varies depending on how thick the chops are.
Step 7: When done, remove the chops from the pan and onto a platter. Tent with foil and allow them to rest for at least 3 minutes before serving. Enjoy!
