2 tbsp butter, room temperature
1 1/2 lbs Certified Angus Beef ® ground beef, 80/20 lean
4 white hamburger buns
1/2 c. mayonnaise
1 tbsp grated yellow onion
1 tsp Worcestershire sauce
2 tsp hot sauce
1 tbsp yellow mustard
4 slices American cheese
8 slices vine-ripe tomatoes
2 c. shredded iceberg lettuce
1 1/2 tsp kosher salt
1/2 tsp pepper
HOW TO MAKE A CLASSIC SMASHED BURGER
Step 1: Into 8 equal (about 3 ounces) balls, divide the ground beef. It should be like a size of a ping-pong ball. Keep them in the fridge.
Step 2: Place the mayonnaise, mustard, grated onion, hot sauce, and Worcestershire in a small mixing bowl. Stir well to make the special sauce, then place in the fridge until ready to use.
Step 3: Heat the butter in a large cast-iron griddle or 2 large cast-iron pans over high heat. Toast the buns in the melted butter, then transfer to plates when done.
Step 4: On the hot cooking surface, space the beef balls, then smash each into 1/4-inch-thick patties using a metal spatula. Tips: Push down the top of the first spatula with the handle of another spatula and make sure to use parchment paper to keep the spatula from sticking to the beef.
Step 5: Sprinkle each patty with a tsp reserved special sauce, salt, and pepper. Sear the patties for about 2 to 3 minutes until some of the fat starts to bubble up in the middle of the patty. Flip right away and top 4 pieces of patties with a slice of cheese each. Continue to sear for a minute more before topping the cheese with a plain patty.
Step 6: To build the burgers, smear the bottom bun with the special sauce, then top with shredded lettuce, tomato, double burgers, and the top bun.
Step 7: Serve and enjoy!
