Christmas Sugar Cookie Bars

These easy and quick Christmas Sugar Cookie Bars will make your Holiday special and save you time! Soft cookies with a thick layer of frosting and fun design that the kids will go crazy about!

Ingredients

Sugar Cookie Bars:

1/2 c unsalted butter softened to room temperature

4 ounces cream cheese

1 c white sugar

2 tsp vanilla extract

1/2 tsp almond extract optional

2 large Eggs

2 1/4 c all-purpose flour

2 tsp cornstarch

1 tsp baking powder

1/4 tsp salt

Frosting:

1/2 c unsalted butter

2 ounces cream cheese

1/4 tsp salt

1/2 tsp vanilla extract

2 – 3 c powdered sugar

How to make Christmas Sugar Cookie Bars

To make the Sugar Cookie Bars:

Step 1: Prepare the oven. Preheat it to 350 degrees F.

Step 2: Use aluminium foil or parchment paper to line a 9 x 13-inch pan and grease lightly.

Step 3: Combine the butter, cream cheese, and sugar in a large bowl until fluffy.

Step 4: Stir in the vanilla extract, almond extract, and eggs.

Step 5: Sift the flour, cornstarch, baking powder, and salt in another bowl.

Step 6: Add the four mixture into the butter mixture around half mixture at a time. Carefully beating.

Step 7: Place the batter into the prepared pan. Press the batter to make an even layer with your lightly greased hands.

Step 8: Place inside the preheated oven and bake for about 22 to 25 minutes or until the top is set and a toothpick inserted in the centre of the bar comes out clean.

Step 9: Once done, remove the bars from the oven and let them cool completely into the pan.

To make the Frosting:

Step 10: In a mixing bowl, add the butter and beat until soft.

Step 11: Add in the cream cheese and beat until incorporated.

Step 12: Stir in the salt and vanilla extract.

Step 13: Beat in the powdered sugar with a mixer on low speed adding about half a cup at a time until you reached your desired sweetness and thickness.

Step 14: Grab the cooled cookie bars, frost, and sprinkle with holiday sprinkles on top.

Notes:

These bars can be stored in an airtight container at room temperature for up to 3 days and up to 5 days in the fridge.

Tightly wrapped the unfrosted bars and freeze for up to 3 months. Before frosting and serving, thaw the frozen bars in the fridge overnight and bring to room temperature.

To make a smaller batch, cut the ingredients in half and use an 8 x 8 or 9 x 9-inch pan. Bake at about the same time.

1/8 tsp salt

1 – 1 1/2 c powdered sugar
