Chocolate Covered Cherries

Prep time: 3 hrs 30 mins | Serves: 25-30 cherries

I love these Chocolate Covered Cherries. It’s so fun to make and eat, it’s super hard to stay out of it! I’ve made a bunch last week and they didn’t stay long in the fridge.

Ingredients

3 cups powdered sugar

1/4 cup margarine or butter

1/4 cup condensed sweetened milk (not evaporated)

4 teaspoons vanilla extract

Pinch salt

1 pkg high-end chocolate chips (milk, semi-sweet, or dark)

1 jar(s) maraschino cherries, drained and dried, reserve the juice

How to make Chocolate Covered Cherries

Step 1: In a mixing bowl, whisk the powdered sugar, margarine or butter, condensed sweetened milk, vanilla extract, and salt until smooth and not sticky. Place the fondant in the fridge to chill for at least an hour.

Step 2: Using wax paper, line a baking sheet. In a single layer, spread the cherries out to the prepared sheet, if possible with stems on, then freeze for at least an hour.

Step 3: Take the fondant and cherries from the fridge and freezer when ready to make the chocolate-covered cherries. I suggest taking a few cherries and fondants at a time so they will not get too warm or sticky. Now, in 1 to 2 tsp fondant, wrap each cherry and form a tight ball. To the tray, place the cherries and freezer for an hour.

Step 4: Melt the chocolate either in the microwave or double-boiler. With enough reserved cherry juice, thin the chocolate down until you have the right consistency for dipping.

Step 5: Remove a couple of fondant-wrapped cherries at a time from the freezer and fully coat them in the chocolate. If the cherries do not have stems, use a toothpick and stick them to the cherry before dipping the cherries to the melted chocolate. Allow the excess chocolate to drip off before placing the cherry on wax paper. On top of the cherries, dab a little extra chocolate to cover the toothpick hole.

Step 6: Set the dipped cherries in the fridge when done. Store them in an airtight container and place them in the fridge.
