Chilis Big Mouth Bites

I am obsessed with Chili’s sliders. They are the best little cheeseburgers, I’ve ever tasted! And this copycat recipe of Chili’s Big Mouth Bites gets me to enjoy my favorite teeny-weeny cheeseburgers at home any time! I am drooling over this perfectly seasoned ground beef that is seared and placed in toasted brioche buns topped with, cheese, bacon, sauteed onions, and drizzled with jalapeno ranch sauce.

Ingredients

1/4 lb. bacon

1 tbsp butter for sliders

1 1/2 lbs ground chuck

1/2 c. diced white onion

1 tbsp butter for sauteing onions

2 slices of American cheese

1 tsp chopped pickled jalapeno peppers

8 brioche buns or other slider buns

1 c. Ranch dressing

1 tsp salt

1/2 tsp ground black pepper

How to make Chilis Big Mouth Bites

Crispy Bacon:

Step 1: In a large skillet, cook the bacon. Transfer the cooked bacon to a wire rack to drain.

Step 2: Wipe the skillet, saving the bacon grease for cooking. Break the bacon once cooked into about 2 to 3-inches pieces.

Jalapeno Ranch Sauce:

Step 3: Into a blender, place ranch dressing, and pickled jalapenos. Pulse until you have a smooth dressing.

Sauteed Onions:

Step 4: To a large skillet, melt the butter. Then, add the diced onion and cook until translucent. Set the onion aside when done.

Hamburger Slider:

Step 5: Into a bowl, place the ground chuck. Season with salt and freshly ground black pepper. Mix well.

Step 6: Into 8 portions, divide the seasoned ground beef. Into the skillet, place many burger patties, making sure to not overcrowd the pan. Cook the patties for about 3 to 4 minutes per side until browned. Then, add 1/4 slice of American cheese on each patty once the burger has browned.

Step 7: On the bottom bun, place the cooked onions and bacon. Cover with the top burger patty and drizzle with some of the spicy ranch sauce. Then, add the top bun.
