Chili Relleno Casserole

Prep time: 20 mins | Cook time: 45 mins | Serves: 8

Serve this filling, delicious casserole as the main course or along with your other favourite Mexican dishes, and enjoy a hearty meal with your family! Loaded with flavour, this cheesy, perfectly seasoned Chili Relleno Casserole with a fluffy egg-like texture is an ideal busy weeknight dinner. Ready in less than an hour using only simple ingredients. A true winner and a keeper!

Ingredients

1 pound ground sirloin

1/2 cup chopped onion

3/4 cup red bell pepper

1 teaspoon olive oil

1/2 teaspoon salt

1/4 teaspoon black pepper

1/2 teaspoon garlic powder

1 teaspoon cumin

1/4 teaspoon allspice

2 can(s) chopped green chile, 4 ounces each

1 1/2 cups shredded sharp cheddar cheese, and a little more for the top of the casserole

1 dash(es) milk

1/2 cup sour cream

1/4 cup all-purpose flour

4 Eggs, beaten

dash(es) Tabasco

toppings of sour cream, black sliced olives, and chopped green onions

How to make Chili Relleno Casserole

Step 1: Heat the olive oil in a medium-sized skillet. Add the onion and bell pepper. Season with a pinch of salt. Saute until the onion is translucent.

Step 2: To the pan, add the ground beef. Season with salt and pepper, cumin, allspice, garlic powder. Cook the beef until just browned, making sure not to overcook the beef, as it is still going in the oven.

Step 3: At an angle, set the skillet, allowing the fat to drain away from the beef mixture. Using a paper towel, soak up the grease and discard.

Step 4: Add a can of chiles in a 9 x 13 x 1 1/2 inch baking dish, spreading it evenly on the bottom. Sprinkle the chiles with the sharp cheese, then add the drained ground beef mixture on top. Evenly spread it before adding in the second can of chiles.

Step 5: Place the milk, sour cream, flour, salt, pepper, beaten eggs, and a dash of Tabasco in a small mixing bowl. Stir well until smooth. Over the dish, evenly pour this mixture. Then, place in 350 degrees preheated oven and bake for about 45 to 50 minutes until set.

Step 6: In the last 10 minutes of baking, add more cheese on top. You can broil the dish if it is not browning enough for about 5 minutes. Just make sure to watch it closely.

Step 7: Remove from the oven when done and slice the casserole into squares. Serve topped with sour cream, black olives, and chopped green onions. Enjoy!
