5 Eggs
1 3/4 c whole milk
3 tbsp all-purpose flour
1 tsp baking powder
1/4 tsp salt
1/4 tsp black pepper
3 cans (7 ounces) whole green chillies, drained
2 c shredded Monterey Jack cheese, divided
1 c shredded cheddar cheese, divided
salsa and sour cream, for serving (optional)
How to make Chili Relleno Casserole
Step 1: Prepare the oven. Preheat it to 350 degrees F.
Step 2: Use a nonstick spray to lightly grease a 3-quart baking dish.
Step 3: Combine the eggs, milk, flour, baking powder, salt, and pepper in a medium bowl until completely mixed.
Step 4: Open and clean out any seeds from the chilis.
Step 5: In the bottom of the prepared baking dish, lay flat half of the chilli.
Step 6: Sprinkle over a cup of jack cheese and half a cup of cheddar.
Step 7: Duplicate the layer one more.
Step 8: And pour the egg over.
Step 9: Bake in the preheated oven for about 45 minutes or until the edges are golden and the middle puffed up.
Step 10: Once done, remove from the oven and allow to cool for at least 5 to 10 minutes before slicing into squares.
Step 11: If desired, serve with salsa and sour cream. Enjoy!
