Chili Relleno Casserole

Prep Time: 10 mins | Cook Time: 45 mins | Total Time: 55 mins | Servings: 8

Layers of gooey cheese and peppers with puffs of baked eggs on top, this Chili Relleno Casserole is insanely simple and delicious! Serve with salsa or sour cream and watch this disappear in a blink!

Ingredients

5 Eggs

1 3/4 c whole milk

3 tbsp all-purpose flour

1 tsp baking powder

1/4 tsp salt

1/4 tsp black pepper

3 cans (7 ounces) whole green chillies, drained

2 c shredded Monterey Jack cheese, divided

1 c shredded cheddar cheese, divided

salsa and sour cream, for serving (optional)

How to make Chili Relleno Casserole

Step 1: Prepare the oven. Preheat it to 350 degrees F.

Step 2: Use a nonstick spray to lightly grease a 3-quart baking dish.

Step 3: Combine the eggs, milk, flour, baking powder, salt, and pepper in a medium bowl until completely mixed.

Step 4: Open and clean out any seeds from the chilis.

Step 5: In the bottom of the prepared baking dish, lay flat half of the chilli.

Step 6: Sprinkle over a cup of jack cheese and half a cup of cheddar.

Step 7: Duplicate the layer one more.

Step 8: And pour the egg over.

Step 9: Bake in the preheated oven for about 45 minutes or until the edges are golden and the middle puffed up.

Step 10: Once done, remove from the oven and allow to cool for at least 5 to 10 minutes before slicing into squares.

Step 11: If desired, serve with salsa and sour cream. Enjoy!
