Ingredients

2 cans kidney beans drained and rinsed (15-oz. cans)

2 lbs ground beef or turkey

1 small yellow onion about 1 ½ cups diced

2 small green peppers about 2 cups diced

2 cans tomatoes diced (15-ounce cans)

6 oz. can tomato paste

15 oz. can tomato sauce

15 oz. water

3 tbsp chilli powder

2 tbsp garlic powder

2 tbsp onion powder

3 tbsp cumin

1 tsp chipotle powder

½ tsp cayenne pepper

1 tbsp paprika

½ tsp baking soda optional

1 tsp white pepper

½ tbsp salt

How to make Chili

Step 1: Saute the diced peppers and onions in a large Dutch oven until clear and beginning to caramelize.

Step 2: To the Dutch oven, add the seasonings except for the baking soda and continue to cook for another minute or two, stirring to make sure it doesn’t burn.

Step 3: Now, add the ground meat and cook until just done. Then, pour in the tomato sauce followed by the diced tomatoes, water, and tomato paste.

Step 4: Bring the mixture to a simmer and cook for approximately 5 minutes over medium-low heat. Add the drained beans, then stir in the baking soda.

Step 5: Keep stirring until the bubbles are gone over medium heat. When done, remove from the heat and serve right away.

Notes:

Keep stirring to prevent the chilli from burning.

To save time, prep the ground beef in advance (in large batches) and freeze. For this recipe, you can also use pre-cooked ground beef.

Adding the baking soda assist to cup the tomatoes’ acidity.
