This Chile Rellenos Casserole is part of my top ten favourite casseroles. Like my other go-to, this takes a breeze to make using only a few simple ingredients. This guarantees a filling and delicious meal that my entire family loves so much! If you are looking for another casserole recipe to try, this is it!

Light yet filling with a hint of kick from the green chiles. If you want extra heat, feel free to add some red pepper flakes. Serve this casserole straight from the oven while everything is hot. Serve alongside your favourite greens for an easy and quick weeknight dinner.
Ingredients
2 eggs
1/2 pound ground beef (or ground turkey or chicken)
3/4 c. milk
1 10-ounces can whole green chillies (or 2 roasted fresh green chiles)
1 1/2 c. cheddar cheese
1/4 onion (chopped)
1/8 c. flour
1/2 teaspoon salt
1/2 teaspoon pepper
1 teaspoon cumin
How to make Chile Rellenos Casserole
Step 1: Prepare the oven. Preheat it to 375 degrees F.
Step 2: Cook the hamburger meat with onion. Drain when done, then add the cumin and season with salt & pepper.
Step 3: Using non-stick cooking spray, lightly grease your pan. With whole chiles. Line the bottom of the pan.
Step 4: Over the green chiles, layer the meat and top with cheese and chopped green chiles.
Step 5: Combine the eggs with milk until well blended. Add the flour and mix until well incorporated. Then, pour this over the dish.
Step 6: Place in the preheated oven and bake for about 35 to 40 minutes until the casserole is done.
