My meal plan is never complete without this deliciously comforting Chicken Zucchini Casserole. Made with chicken and zucchini tossed in a cream sauce and topped with stuffing. This is one of the best casseroles to try and keep.
This casserole is always a hit at home, and my family loves this so much! They adore the rich flavours of this filling casserole. To save time and for extra savoury flavour, you can try using a rotisserie chicken from the deli. If desired, you can make this ahead of time and just store it in the fridge until ready to bake. It’s a real handy recipe especially for busy moms like myself.

Ingredients
6 oz. boxed stuffing mix (such as Stove Top)
½ c. butter melted
4 diced zucchini (about 4-5 c.)
3 boneless, skinless chicken breasts cooked and diced
10 ½ oz. canned cream of chicken soup
½ onion diced
½ c. sour cream
How to make Chicken Zucchini Casserole
Step 1: Prepare the oven. Preheat it to 350 degrees F.
Step 2: Place the stuffing mix and melted butter in a large bowl. Mix well until combined, reserving a half cup of the mixture for topping.
Step 3: In a large bowl with the stuffing, add the zucchini along with the cooked chicken, cream of chicken soup, onion, and sour cream.
Step 4: In a 9 x 13-inch glass pan greased with nonstick cooking spray, evenly spread the zucchini mixture and sprinkle with the reserved stuffing mix.
Step 5: Place in the preheated and bake for about 40 to 50 minutes, uncovered, until cooked through and golden brown on top.

For this recipe, you can also use a rotisserie chicken from the deli to save time. Plus, it adds a savoury flavour to this casserole.
