This recipe is one of my favourite and go-to zucchini recipes. It is super easy to make using only a few basic ingredients, and I can throw this together even on the busiest days. To make this, all you need are zucchini, chicken breasts (cooked and diced), stuffing mix, cream of chicken soup, and some readily available ingredients.
Chicken is a staple at home. My chicken dishes are always a hit, but whenever I want to change things up a little, I make this casserole with chicken and zucchini in a cream sauce and topped with stuffing. For a quicker version, you can use rotisserie chicken. This also adds extra flavour to the casserole! For a quick meal anytime, throw this together as directed in advance and store it in the fridge until ready to bake.

Ingredients
4 diced zucchini (about 4-5 c.)
3 boneless, skinless chicken breasts cooked and diced
½ c. butter melted
½ c. sour cream
10 ½ oz. canned cream of chicken soup
½ onion diced
6 oz. boxed stuffing mix (such as Stove Top)
How to make Chicken Zucchini Casserole
Step 1: Prepare the oven. Preheat it to 350 degrees F.
Step 2: Place the stuffing mix and melted butter in a large bowl. Mix well until combined. Set half cup of the mixture aside for the topping.
Step 3: In a large bowl with the stuffing, add the zucchini, cooked chicken, cream of chicken soup, onion, and sour cream.
Step 4: In an even layer in a greased (with nonstick cooking spray) 9 x 13-inch glass pan, spread the zucchini mixture and sprinkle with the reserved stuffing. Place in the preheated oven and bake the casserole for about 40 to 50 minutes, uncovered, or until the casserole is completely cooked and the top is golden brown.
Note:
You save time and add savoury flavour to the casserole, you can use a rotisserie chicken from the deli.
