Ingredients
6 strips bacon cooked, drained, chopped
4 chicken breasts
1 zucchini thinly sliced
0.5 ounce dry Ranch seasoning (½ packet)
½ c. Parmesan cheese shredded
½ c. Mozzarella cheese shredded
How to make Chicken Zucchini Bake with Bacon
Step 1: Prepare the oven. Preheat it to 375 degrees F.
Step 2: To a casserole dish, add 4 chicken breasts and sprinkle with dry Ranch seasoning mix. On top, place the sliced zucchini and chopped cooked bacon. Lastly, top everything with shredded Parmesan and mozzarella cheeses.
Step 3: Place in the preheated oven and bake for about 20 minutes. Set the oven to broil in the last 2 to 3 minutes (optional).
Step 4: Before serving, let the chicken rest in the casserole dish for at least 5 to 10 minutes.
Notes:
For this recipe, you can use regular chicken or thinly sliced chicken breasts. You can use large chicken breasts, just slice each in half, horizontally.
The cooking time of the chicken depends on your oven and the thickness of the chicken breasts.
The chicken is done if it is no longer pink in the middle.
I suggest checking often when broiling to ensure the cheese doesn’t burn over the chicken.
