2 tablespoons olive oil (divided)
4 tablespoons butter (divided)
4 chicken breasts halved crosswise
Salt and pepper to taste
10 ounces (1 package) Cremini mushrooms, sliced
Creamy Parmesan Sauce:
4 cloves garlic minced
1 tablespoon wheat flour
1 c chicken broth
1 c heavy cream
1/2 c grated Parmesan cheese
1/2 teaspoon salt
1 teaspoon garlic powder
1/4 teaspoon black pepper
1 c spinach
How to make Chicken with Spinach and Mushrooms in Creamy Parmesan Sauce
Prepare the Chicken:
Step 1: Place the chicken breasts on a large plate. Season with salt and pepper and set aside.
Step 2: Add a tbsp olive oil and a tbsp butter in a large skillet. Melt the butter over medium-high heat.
Step 3: When the butter has melted, add the chicken into the skillet. Brown for about 4 minutes per side. Then, transfer to a plate.
Step 4: Into the same pan, place the sliced mushroom with the rest of the tbsp olive oil and tbsp butter. Saute the mushrooms for about 5 minutes until dark and moist. When done, remove from the skillet.
Prepare the Sauce:
Step 1: To the pan, add the rest of the butter. Allow melting before adding in the garlic. Cook for a few minutes until the garlic is slightly browned.
Step 2: Add in a tbsp of flour and continue to cook until it is no longer raw.
Step 3: Gradually pour in the chicken broth and heavy cream. Allow simmering.
Step 4: Once the liquid is simmering, add in the Parmesan cheese and stir. Cook for 2 to 3 minutes more.
Step 5: Season with salt, garlic powder, and pepper. Adjust the seasoning according to taste.
Step 6: Into the sauce, add the spinach and let it wilt.
Step 7: Place the cooked mushrooms back to the skillet and stir to incorporate.
Step 8: Add in the cooked chicken and reheat for another 2 to 3 minutes. Cover the pan.
Step 9: Spoon the sauce over the chicken and enjoy it immediately.
