Easy and quick chicken teriyaki with crackly and crispy skin. This only takes 20 minutes to cook! You can pan-fry the chicken or grill or make it in an Instant Pot or slow cooker. This is a very versatile recipe with the same result – melt in your mouth and insanely delicious!

INGREDIENTS
1 pound chicken thighs, deboned, skin-on
salt
white sesame seeds for garnishing, optional
TERIYAKI SAUCE:
1/3 c Japanese mirin (sweet rice wine)
2 tbsp soy sauce, low sodium preferred
1 tbsp sugar
HOW TO MAKE CHICKEN TERIYAKI
Step 1: Lightly season with a pinch of salt on both sides of the chicken thighs.
Step 2: In a saucepan, combine the Teriyaki Sauce ingredients; Japanese mirin, soy sauce, and sugar. Simmer over low heat for about 10 minutes until the sauce is reduced to a thicker consistency.
Step 3: Meanwhile, heat a non-stick skillet over high heat.
Step 4: Pan-fry skin-side down the chicken thighs until all sides are nicely browned and the chicken skin has a crackly crispy texture.
Step 5: Turn the heat off and transfer the chicken out to let them cool.
Step 6: Before serving, slice the chicken thighs into pieces and drizzle with teriyaki sauce. If using, garnish with sesame seeds. Serve quickly with steamed rice.
