These Chicken Taquitos are always a hit! They are incredibly easy and quick to throw together using only seven ingredients. Filled with cream cheese, salsa, cheese, sour cream, and spinach, these tortilla roll-ups are fried to perfection! These cheesy taquitos are my favourite appetizer and filling enough to serve as a main dish along with Mexican rice and salsa.
Chicken Taquitos also known as flautas is almost similar to chicken tacos but with cream cheese, salsa, and baby spinach. And instead of folded these are rolled around the filling of meat and cheese and deep-fried to perfection! I have been a fan of these bad boys since I can remember. I first made this when I was still in boarding school and served these many times as an appetizer. The best part is you can easily make this ahead of time. Simply cover it and store it in the fridge for up to 24 hours. And this also freezes well which is perfect for those insanely busy days!

Ingredients
3 c. chicken cooked and shredded
6 ounces cream cheese softened
1/3 c. sour cream
1/2 c. salsa
1 1/2 c. Colby jack cheese
1 1/2 c. baby spinach chopped and stems removed
12 6” corn tortillas
vegetable or canola oil for frying
HOW TO MAKE CHICKEN TAQUITOS
Step 1: In a saucepan, heat half an inch of oil over medium heat.
Step 2: Place the chicken, cream cheese, sour cream, salsa, co-jack, and spinach in a large bowl. Mix well until combined. To taste, season with salt and pepper.
Step 3: Meanwhile, to the middle of a tortilla, add a couple of tbsp of chicken/cream cheese mixture. Spread the mixture out and roll the tortilla. Using tongs, place the roll-up to the hot oil seam-side down and cook until both sides are golden brown.
Step 4: Fill, roll, and fry the remaining tortillas. Transfer the fried tortillas on paper towels to drain. Serve immediately. Enjoy!
