Ingredients
¼ c. olive oil
6 thin sliced chicken breasts
½ c. chicken broth
1 container green onion cream cheese
1 small bag of fresh baby spinach
1 dash Weber Herb and Garlic Seasoning
1 large package of sliced mushrooms
8 ounces shredded mozzarella cheese
1 dash pepper
HOW TO MAKE CHICKEN SPINACH AND MUSHROOM LOW-CARB OVEN DISH
Step 1: In a pan, place the chicken in a single layer, then place the mushrooms and spinach on top. Sprinkle with seasonings.
Step 2: Combine the softened cream cheese with olive oil and chicken broth until blended. Pour this over the chicken.
Step 3: Using foil, cover the pan, but do not seal. Place in the oven and bake for about 20 minutes at 375 degrees. Uncover and continue baking for an additional 20 to 25 minutes.
Step 4: On top, sprinkle the mozzarella cheese and bake for 10 minutes more or until the cheese is beginning to brown.
Step 5: Remove from the oven when done and allow the dish to cool for about 10 minutes before serving. Enjoy!
Tip:
For this recipe, you can use turkey instead of chicken.
