Going Mediterranean tonight? This delicious Chicken Souvlaki is the perfect meal to serve with grilled pita, rice, salad with some Tzatziki sauce for dipping.

1.5 pounds chicken (3 to 4 boneless breast or 12 to 14 chicken tenders)
3 tablespoons oregano (fresh leaves or 1.5 tbsp dried or a mix of both)
1 tablespoon garlic (4 to 5 cloves, fresh minced)
3 tablespoons olive oil
1/4 c. lemon (about 1 large lemon juice)
1/2 teaspoon cumin powder
2 tablespoons parsley (fresh leaves, chopped)
1/2 teaspoon chilli flakes
1/2 teaspoon salt
1/4 teaspoon black pepper (freshly cracked)
Grilled pita, for serving (optional)

How to make Chicken Souvlaki
Step 1: In a wide bowl with a lid or resealable bag, combine all the ingredients except the chicken to make the Souvlaki Marinade. Set aside.
Step 2: Into small 1 to 2” pieces, slice the chicken breast. Add the slices to the marinade and evenly coat. Cover the bowl or close the bag (if using a resealable bag) and place it in the fridge until ready to use. Marinate the chicken for at least 20 to 30 minutes or overnight. For this recipe, you can also use chicken tenders or chicken breasts cut into small strips (about 2” long and half-inch wide). Place these on a tray, cover with a piece of plastic, then pound to have even sizes.
Step 3: To grill, preheat the grill. Into the skewers, skew the marinated chicken souvlaki. Place on the grill and cook until the chicken is completely cooked on every side.
Step 4: If serving the chicken souvlaki with pita on the side, grill the pita on a lightly oiled grill for about 30 seconds to a minute per side until nice grill marks appear.
Notes:
Grilling tips:
For proper handling, make sure to leave a bit of space towards the handle of skewers.
Presoak the wooden skewers in water if planning to use them so they will not burn quickly on the grill. And ensure to cover the tips with aluminium foil.
To make Chicken Souvlaki in the oven:
Prepare the oven. Set on the broiler.
On a sheet lined with foil or parchment, place the skewers. Cook each side of the kabobs for about 5 to 7 minutes until cooked through.
