CHICKEN RICE CASSEROLE

This is a delicious casserole easily made with onions, carrots, basmati rice, and chicken. It’s a complete meal in one that’s impressive enough to serve to a crowd. If you want another simple meal to add to your weeknight dinner rotation, this easy recipe is a must! If desired, you can serve this chicken rice casserole with a simple side salad.

This casserole is another no-fuss recipe you can make using just a few simple ingredients. You can use your favourite chicken seasoning such as Dash Original Seasoning, Taco Seasoning, Old Bay Seasoning to suit your taste. For this recipe, I recommend using boneless chicken thighs as they are more tender and succulent but feel free to use whatever you have available.

INGREDIENTS

3 tablespoons Olive oil

1 pound Boneless, skinless chicken thighs

1 Onion medium

2 Carrots medium

1 cup Basmati rice

1 teaspoon Favorite Chicken Seasoning

2 c. Chicken broth

¼ teaspoon turmeric, optional (for colour)

1 teaspoon Salt and pepper, to taste

HOW TO MAKE CHICKEN RICE CASSEROLE

Step 1: Prepare the oven. Preheat it to 450 degrees F.

Step 2: Heat the olive oil in a large skillet over medium-high heat. Once the oil is hot, add the chopped onions to the skillet and saute for approximately 3 minutes. Now, add the carrots and continue to cook for additional 3 minutes.

Step 3: To the skillet, add the chicken and sprinkle with salt, pepper, and your preferred chicken seasoning such as Dash Original Seasoning, Taco Seasoning, Old Bay Seasoning. Continue cooking the chicken for about 5 to 7 minutes.

Step 4: To a medium casserole dish, transfer the chicken, then add the rice and chicken broth. Mix well and tent the casserole using foil. Place in the preheated oven and bake for about 40 minutes.

NOTES:

Some great options for chicken seasoning are Dash Original Seasoning, Taco Seasoning, Old Bay Seasoning.

If needed, add extra or less salt.

To create that beautiful yellow colour, add 1/4 tsp turmeric.
