No words can describe my love for casseroles. Their ability to give us a complete and comforting meal that works for everybody or any occasion raised them to the mountains. I have many to mention favourites but this Chicken Rice Casserole is my go-to. A classic, creamy, cheesy, and super delightful!
This version of the most beloved casserole is surely a no-fuss. There is no precooking required. It is just a matter of stirring everything together. And it is so versatile that you can swap the ingredients with whatever you have in hand.
INGREDIENTS
3 c. chicken broth
2 (10.5 ounces) can cream of celery soup
1/4 c. (1/2 stick) butter, melted
2 large boneless skinless chicken breasts, cubed
2 c. white rice, uncooked
1 tsp kosher salt
1/2 tsp freshly ground black pepper
1 tsp garlic powder
1/2 tsp dried thyme
1 c. cheddar cheese, grated
How to make Chicken Rice Casserole
Step 1: Prepare the oven. Preheat it to 375 degrees F.
Step 2: Ready a 9 x 13-inch baking dish. Grease and set aside.
Step 3: Combine the chicken broth, cream of celery soup, and butter in a medium bowl until well mixed. Add in the rice, chicken, salt, pepper, garlic powder, and thyme.
Step 4: Into the prepared baking dish, pour the rice mixture. Tightly cover using aluminium foil.
Step 5: Place inside the preheated oven. Bake for about an hour and fifteen minutes until the rice is cooked through and the chicken is tender.
Step 6: Remove the cover and evenly sprinkle the cheese on top.
Step 7: Bake for another 10 minutes until the cheese has melted.
Step 8: Take the casserole out of the oven and allow it to rest for at least 10 minutes.
Step 9: Serve and enjoy!
