1 boneless, skinless chicken breast
2 cups flour(250 g)
4 eggs, beaten
2 cups seasoned breadcrumb(230 g)
1 cup oil(240 mL), for frying
1 large baguette
10 slices mozzarella cheese
marinara sauce
GARLIC BUTTER:
⅓ cup butter(75 g), melted
3 cloves garlic, minced
1 tablespoon fresh parsley, chopped
1 tablespoon grated parmesan cheese
How to make Chicken Parmesan-Stuffed Garlic Bread
Step 1: Slice into half-inch or 1 1/4cm thick strips the chicken breasts.
Step 2: Place the flour in a bowl, the eggs in another bowl, and bread crumbs in a third bowl.
Step 3: Coat the chicken strip in flour and dust off any excess. Then, dip in egg, and roll in bread crumbs to coat completely.
Step 4: Do the same for the rest of the chicken.
Step 5: Add oil in a pan and heat over medium heat.
Step 6: While oil is heating, prepare the oven. Preheat it to 350 degrees F or 180 degrees C.
Step 7: Once the oil is hot, add the breaded chicken strips and fry both sides until golden brown.
Step 8: Take the strips out of the pan and transfer on a paper towel to drain.
Step 9: Slice the baguette into thirds or fourths so they are roughly the same length as the chicken strips.
Step 10: Use a knife to hollow out the insides of each baguette.
Step 11: Get two pieces of mozzarella and lay one on top of the other with an inch or 2 1/2cm overlap. Add the chicken in the middle and tightly fold the mozzarella around the chicken.
Step 12: Shove the rolled chicken strips inside the baguette.
Step 13: Cut each baguette into an inch or 2 1/2 cm slices and put the pieces tightly side by side on a baking sheet lined with foil.
Step 14: Add garlic butter ingredients in a small bowl. Mix well.
Step 15: Evenly brush the slices of baguette with the garlic butter mixture.
Step 16: Wrap over the re-assembled baguette with the foil. Place inside the preheated oven and bake for about 20 to 25 minutes or until the cheese has melted and the top begins to brown.
Step 17: Take the baguette out of the oven and remove the foil. Serve immediately with marinara sauce. Enjoy!
