1/2 c vegetable oil
4 tbsp unsalted butter, melted
4 boneless, skinless chicken breasts, thinly sliced
1/4 c extra-virgin olive oil
8 slices mozzarella cheese, divided
1 lb. refrigerated pizza dough, room temperature
2 Eggs
1 tbsp whole milk
1/2 c grated Parmesan cheese, divided
6 cloves garlic, minced
1 c all-purpose flour
1/4 c fresh parsley, chopped
Salt and pepper, to taste
2 c Italian bread crumbs
1/2 c marinara sauce, plus more for serving
Directions:
Prepare the oven and preheat it to 200 degrees C or 400 degrees F.
Line the inside of a sheet pan with parchment paper.
Sprinkle flour onto a flat surface, then place the dough on it. Roll it out and form it into two 2-feet ropes. Tie the ropes to make an eight-figure knot. Place it onto the prepared sheet pan.
Brush the dough with olive oil, then wrap it with plastic. Let it rise for about half an hour.
Place it in the preheated oven and bake for about 25 minutes or until it turns golden brown. Remove from the oven and allow it to cool at room temperature.
In three individual bowls, add flour, eggs & milk mixture, and breadcrumbs.
Sprinkle salt and pepper over the chicken breasts, then rub each to coat. Coat each with flour, egg mixture, and breadcrumbs. Shake off any excess.
Place cast-iron skillet on the stove and turn the heat to medium. Add vegetable oil and allow it to become hot.
Add the chicken into the hot skillet, then cook each side for about 3 minutes or until brown. Move them onto a clean plate lined with paper towels to drain excess oil.
Add parsley, garlic, and melted butter into a mixing bowl. Stir until well blended.
Cut the knot into two, then top each with marinara sauce and spread it evenly.
Top one knot with chicken followed by 1 tbsp of marinara sauce, 2 slices of mozzarella cheese, and 1/2 of the Parmesan cheese. Repeat this process with the rest of the ingredients ending with the other halves of the knots on top.
Brush each sandwich with the garlic butter mixture. Bake for 5 minutes.
Serve and enjoy!
