This is an easy thirty-minute meal with juicy chicken breaded in a panko Parmesan coating topped with easy homemade marinara and melty cheese. A must-try restaurant-quality dish perfectly paired with spaghetti, mashed potatoes, or a simple side salad.

2 large chicken breasts, boneless skinless
6 slices of provolone cheese
3 tablespoons basil, optional
3 tablespoons oil (more if needed)
Bowl 1:
1/4 c. all-purpose flour
¼ teaspoon salt
dash of pepper
Bowl 2:
2 large eggs, beaten
Bowl 3:
3 tablespoons all-purpose flour
2/3 c. panko breadcrumbs
2/3 c. Parmesan cheese, grated
½ teaspoon garlic powder
½ teaspoon salt
¼ teaspoon ground paprika
½ teaspoon Italian seasoning
Homemade marinara:
1 tablespoon unsalted butter
1 teaspoon oil
1/2 small onion, finely chopped
2 garlic cloves, minced
14.5 ounces cubed tomatoes
1 teaspoon Italian seasoning
¼ teaspoon salt
⅛ teaspoon ground black pepper
How to make Chicken Parmesan
Step 1: Prepare the oven. Set it to broil on step 5 of making the chicken.
Step 2: Using parchment paper, line a baking sheet.
Step 3: To make the homemade marinara sauce, saute the onion in a saucepan with tbsp butter and a tsp oil. Stir as needed and cook until done. Now, add the garlic along with tomatoes, Italian seasoning, salt, and pepper. Continue cooking for another 2 to 3 minutes. Using a hand-held blender, puree the ingredients until smooth. Then, return the marinara to the saucepan and simmer until needed over low heat.
Step 4: In half lengthwise, slice the chicken breast. To an even thickness, lightly beat the slices using a meat mallet.
Step 5: Place the ingredients for each bowl (1,2, and 3) in three different bowls. Mix well.
Step 6: First, dredge the chicken in bowl 1, transfer in bowl 2, then bowl 3. Make sure to coat the chicken generously.
Step 7: Heat 3 tbsp oil in a large skillet over medium-high heat. Carefully add the chicken to the hot oil and cook for about 2 to 3 minutes on each side until crispy and entirely cooked. Make sure to not overcrowd the pan and cook the chicken in two batches if needed.
Step 8: To the prepared baking sheet, add the chicken breasts. Over the chicken, pour the marinara, then top with cheese. Place in the oven and broil for about 4 to 6 minutes until the cheese has completely melted.
Step 9: Serve the Chicken Parmesan garnished with some fresh basil. Enjoy!
