chicken breasts (however many you want/need)
olive oil (just one dollop)
minced garlic (a smattering a little more than a smattering if you really like garlic)
red pepper flakes (you can omit these out if you don’t like any heat)
marinara sauce (a jar or less depending on your preference)
Parmesan cheese
mozzarella cheese (you will need twice as much mozzarella as Parmesan)
croutons (Italian-seasoned)
How to make Chicken Parmesan Casserole
Step 1: Start by cutting the chicken breasts into cubes.
Step 2: Put some olive oil, minced garlic, and red pepper flakes into the bottom of a casserole dish. Add the cubed chicken and evenly spread. Pour over enough marinara sauce to cover the chicken, then top with 2 to 1 mozzarella to Parmesan ratio.
Step 3: With croutons, cover the layer of cheese if desired. For this recipe, I used crushed Italian seasoned croutons. On top of the croutons, add another layer of 2 to 1 mozzarella to Parmesan.
Step 4: Place the casserole in a 350 degrees oven and bake for about 35 minutes. When done, remove from the oven and serve right away with some Romaine lettuce with egg and blue cheese vinaigrette on the side. Or enjoy as is.
