No more plain and boring chicken dinner with this super easy and incredibly delicious Chicken Olivia. Made with rotisserie chicken with other pantry ingredients and perfect to serve over rice. This scrumptious and creamy chicken dinner is ready in no more than an hour from start to finish with little effort. I can understand if you are a little sceptical about this, I was too. But it’s super worth it! The presentation might not look so appetizing but this no doubt makes my mouth water! Every bite is an amazing flavour, tickling my taste buds, leaving me craving for more. This is not only perfect over rice but with small pasta, too. I have tried both and it’s hard to pick! Excellent for an unusual weeknight dinner to look forward to.

3 c. rotisserie chicken
2 c. sour cream
2 10.05 cans cream of chicken soup
1/2 c. chopped black olives
7 oz. can green chillies
1 1/2 c. grated sharp cheddar cheese
1/4 c. chopped green onions
salt and pepper to taste
Enough cooked rice to serve with the dinner for each person
How to make Chicken Olivia
Step 1: Shred both the white and dark meat of the rotisserie chicken. Put the shredded meat into the bottom of a 9 x 13-inch baking pan.
Step 2: Place the cans of the cream of chicken soup, sour cream, black olives, chillies, and green onions in a large bowl. Mix well and season with salt and pepper.
Step 3: Over the shredded chicken, pour the mixture and evenly sprinkle with grated cheese. Using foil, tent the pan, place in a 350 degrees oven, and bake for about 30 minutes. Uncover and continue to bake until the cheese has melted and bubbly.
Step 4: When done, remove from the oven and serve the Chicken Olivia over rice. Enjoy!
