Ingredients
1/4 c. chopped green onions
3 c. rotisserie chicken
2 c. sour cream
1/2 c. chopped black olives
7 oz. can green chillies
2 10.05 cans cream of chicken soup
1 1/2 c. grated sharp cheddar cheese
Enough cooked rice to serve with the dinner for each person
salt and pepper to taste
How to make Chicken Olivia
Step 1: Shred both the white and dark meat of a rotisserie chicken. Add the shredded chicken onto the bottom of a 9 x 13-inch baking pan.
Step 2: Place both cans of cream of chicken soup, sour cream, black olives, chillies, and green onions in a large bowl. To taste, add salt and pepper. Mix until well combined.
Step 3: In the pan over the shredded chicken, pour the mixture, then evenly sprinkle with the grated cheese. Tent the pan with foil.
Step 4: Place the pan in a 350 degrees oven and bake the chicken Olivia for about 30 minutes. Take the pan out of the oven and remove the foil. Return to the oven and resume baking until the cheese has melted and bubbly.
Step 5: Serve the chicken Olivia once done over rice. Enjoy!
