This is my husbands’ new obsession – Chicken Lo Mein! It is time to push take-outs aside and whip this easy, fresh, and tasty dish at the comfort of your home.

12 ounces Chinese style lo mein noodles cooked according to the package directions
SAUCE:
2/3 c. soy sauce
1 c. chicken broth
6 tbsp hoisin sauce
5 tbsp cornstarch
6 tbsp oyster sauce
2 tbsp fresh garlic minced
1 tbsp fresh ginger grated
1/2 tsp black pepper
2 tbsp light brown sugar packed
CHICKEN AND VEGETABLES:
1 tbsp sesame oil
3 tbsp vegetable oil divided in half
1 1/2 lb. chicken breast skinless, boneless, and cut into 1” cubes (4 c.)
3 c. fresh broccoli florets
1 small white onion halved and sliced thin (1 ½ c.)
2 c. carrots cut into matchsticks or you can buy pre-packaged
1 red bell pepper seeded and thinly sliced
2 green onions sliced thin on the bias (optional garnish)
1 c. fresh sugar snap peas
1 tbsp fresh garlic minced
How to make Chicken Lo Mein
Step 1: Following the package directions, cook the noodles. Drain when done and set aside.
Step 2: Place the sauce ingredients in a small mixing bowl and stir until well blended.
Step 3: Heat 1 ½ tbsp vegetable oil in a 12-inch skillet over medium-high heat. Once the oil is hot, add the cubed chicken breast to the skillet and cook for about 5 to 7 minutes or until no longer pink inside. Set the chicken aside when done.
Step 4: Add the rest of the vegetable oil and sesame oil in the same pan over medium-high heat. Saute the sliced onions and carrots for about 3 to 4 minutes, stirring perpetually.
Step 5: To the pan, add the sliced red peppers, broccoli florets, sugar snap peas, fresh minced garlic, and grated ginger. Adjust the heat to medium to keep the garlic from burning. Cook while stirring for another 3 minutes.
Step 6: Give the sauce a good whisk, then pour it over the vegetables. Cook for additional 1 to 2 minutes or until the sauce starts to thicken. Take off the heat when one, then add the chicken and cooked noodles. Toss to coat.
Step 7: Serve garnished with some sliced green onions. Enjoy hot!
