Chicken Fajitas Bake (Low Carb and Keto)

This Mexican dish is low carb and Keto. An easy dish to throw together using only a few simple ingredients. One of the most loved Mexican dishes at home with loads of your favourite fajita flavours in a cheesy casserole! One of the reasons I love this recipe so much is this is made in one pan from stove to oven. Easy clean-up, especially on the busiest and laziest days!

Make weeknight dinner easy and fast with this low-carb meal perfect for the entire family! Follow the pretty straightforward step-by-step instruction below, and you are on your way to one of the best Mexican dishes you’ll crave over and over!

Ingredients

6 (4 to 6 ounces each) boneless skinless chicken thighs, or breasts cut into 1-2-inch pieces

1 tablespoon olive oil

4 bell peppers, sliced (use different colours to make it pretty!)

1 c. sour cream

1 small onion, sliced

1 recipe of our: Taco Seasoning Mix, or 1 taco seasoning packet

2 c. cheddar cheese, grated

4 ounces of cream cheese, softened

optional: garnish with avocado or guacamole, sour cream, salsa. For spicy lovers add heat with hot sauce

How to make Chicken Fajitas Bake (Low Carb and Keto)

Step 1: Prepare the oven. Preheat it to 350 degrees F.

Step 2: In olive oil, saute the chicken over medium heat until no longer pink. When done, remove the cooked chicken from the skillet and set it aside.

Step 3: To the same pan, add the onions and peppers, then saute until tender.

Step 4: Return the chicken to the pan, then add in the taco seasoning, sour cream, and cream cheese. Mix well until everything is incorporated.

Step 5: Lastly, sprinkle the cheese over.

Step 6: Place in the preheated oven and bake for about 20 minutes or until the cheese is bubbly.

Notes:

To save time, you can use about 5 to 6 cups of pre-cooked chicken.

To serve, enjoy this Chicken Fajita Bake with avocado, guacamole, sour cream, or salsa.
