Chicken Creole

Chicken is a staple at home. We have our favourites and go-to. Our ultimate favourite is this chicken creole. This tastes super good with only a few simple ingredients and is ready in a cinch! If you are looking for another amazing recipe, then you have to give this recipe a try soon. You can add seasoned baked tofu to this chicken creole if desired for some added texture. Ingredients

1/4 c. oil

4 to 6 chicken breasts (for this recipe, I used the frozen boneless, skinless chicken slice into inch size pieces)

1 green pepper chopped

1 medium onion chopped

1 c. celery chopped

1 6 oz. can tomato paste

1 c. chicken broth

1 14.5 oz. can petite diced tomatoes, undrained

1/2 tsp each dried basil oregano, thyme, marjoram, and minced garlic

2 c. rice

1/4 tsp pepper

1/2 tsp salt

How to make Chicken Creole

Step 1: In oil, saute the pieces of chicken until no longer pink. Set the chicken pieces aside when done and keep them warm.

Step 2: Saute the onion, green pepper, and celery in the same skillet until soft. Then, add the tomatoes, broth, tomato paste, and seasonings. Stir until incorporated.

Step 3: Bring everything to a boil. Once boiling, decrease the heat, cover the pan, and simmer for about minutes.

Step 4: Place the chicken back into the pan and let it heat through.

Step 5: Remove from the pan when done and serve the chicken creole right away with rice. Enjoy!

Notes:

You can mix any leftovers with rice and sprinkle with shredded cheese. Pop in the oven until warm, and the cheese has melted. You can serve this chicken creole with garlic bread and salad for a simple meal.
