It’s not only super delicious and very comforting but also freezer-friendly and perfect if you are meal planning as you can make this ahead.

2 tablespoons butter
1 tablespoon olive oil
2 boneless skinless chicken breasts, or 2 c. diced rotisserie chicken
1 1/4 cups white long-grain rice, uncooked
2 1/2 cups chicken broth
10.5 oz. Condensed Cream of Chicken Soup
½ cup sour cream
2 cups shredded cheddar cheese, separated
½ cup milk
2 cups fresh broccoli florets, uncooked
Salt/Pepper, to taste
1 teaspoon Italian Seasoning
Optional Seasonings:
1 teaspoon dried thyme
1/2 teaspoon garlic powder
Casserole Topping:
1 cup Ritz crackers, crushed
2 tablespoons melted butter
TO MAKE CHICKEN BROCCOLI RICE CASSEROLE
Step 1:Ready the oven and preheat it to 350 degrees.
Step 2: Slice the chicken into bite-sized pieces and sprinkle with Italian seasoning, salt, and pepper.
Step 3: Melt the butter in a large pot over medium heat. Then, add the chicken to the pot and cook until both sides are golden brown. This takes about 5 minutes. Set the chicken aside when done.
Step 4: Pour the chicken broth into the pot, then add the olive oil and rice. Bring to a boil, then lower the heat to a simmer. Put the lid on and cook for another 7 minutes. Uncover and add the fresh broccoli. Replace the lid and continue to cook for 8 minutes more.
Step 5: When done, turn off the heat, but leave the lid on. Let the rice sit for at least 10 minutes, undisturbed, before adding back the chicken along with the milk, sour cream, optional seasonings, and half of the cheddar cheese.
Step 6: Into a lightly greased 9 x 13-inch casserole dish, pour everything and top with the remaining cheese. Cover the casserole and bake in the preheated oven for approximately 15 minutes.
Step 7: To make the topping, mix the melted butter with crumbled crackers. Sprinkle this on top of the casserole. Continue to bake for another 15 minutes, uncovered.
Step 8: Before serving, let the casserole rest for at least 15 minutes. Enjoy!
