This Chicken Broccoli Macaroni and Cheese with Bacon is my family’s favorite! A one-dish meal that you can easily make using just a few simple ingredients. Absolutely delicious filled with pasta, broccoli, chicken, bacon, and melty cheese. I love this version of mac and cheese. For this recipe, you can use any of your favorite pasta. I often use tri-colored rotini to hide the veggies from my pickiest eaters, but they said they don’t mind the veggies because this Chicken Broccoli Macaroni and Cheese is simply perfect!
Ingredients
12 oz. skinless chicken breasts, cut into 1/2” thick

6 oz. of uncooked pasta of your choice
3 slice bacon, coarsely chopped
1 tablespoon garlic powder or minced garlic
1 1/4 c. milk
1/4 c. all-purpose flour
3 c. fresh pre-chopped broccoli florets
1 c. chicken broth
5 oz. of cheddar cheese, shredded
1 teaspoon salt
How to make Chicken Broccoli Macaroni and Cheese with Bacon
Step 1: Following the package directions, cook the pasta until al dente. Add broccoli to the pasta within the last two minutes of cooking. Turn the heat off once the water is boiling, then drain the pasta and broccoli.
Step 2: In a skillet, cook the bacon for about 4 to 6 minutes over medium heat until crispy. Set the bacon aside when done.
Step 3: In the same skillet with the bacon grease, cook the chicken. Then, season with garlic and salt. Fry the chicken for about 6 to 8 minutes.
Step 4: In the pan with the chicken, add 3/4 tsp salt, stock, milk, and flour. Stir well and allow to boil. Then, simmer until the mixture has thickened.
Step 5: Then, add two ounces of cheese, followed by the pasta mixture. Stir well before adding the last few ounces of cheese and bacon.
Step 6: Place in the oven and broil for about 2 minutes until the cheese has melted and the dish just starts to brown.
