This is another one of my favourite one-pan meals. Moist chicken and spinach smothered in a delicious, super creamy paprika sauce. The combination of the amazing flavour from the wine perfectly complements the mild tang from the fresh lemon juice. Make sure not to miss this mouthwatering dish. It’s a must and a keeper!

2 tbsp unsalted butter
4 Chicken Breasts (boneless & skinless)
¼ tsp Salt and Pepper (each for seasoning chicken)
1 tsp Smoked Paprika (for seasoning chicken)
Creamy Paprika Sauce:
4 cloves garlic minced
½ c. dry white wine
1 tbsp butter
½ c. heavy cream
½ c. chicken broth (sodium-free)
2 c. fresh spinach
1 tsp fresh lemon juice (juice of squeezed lemon)
1 tsp paprika
1 tbsp flour (sifted)
½ tsp salt
How to make Chicken and Spinach in Creamy Paprika Sauce
Step 1: Sprinkle the salt, pepper, and paprika on the entire chicken, then evenly rub the spices on both sides.
Step 2: In a large skillet, melt 2 tbsp butter over medium-high heat. Once the butter has melted, add the chicken to the skillet and cook the first side for approximately 3 minutes. Flip the chicken and adjust the heat to medium. Continue to cook the other side for 3 minutes more. Set the chicken aside on a plate when done.
Step 3: To make the Creamy Sauce, melt a tbsp butter in the same skillet. Add the garlic to the melted butter and cook for about 2 minutes, stirring often. Using a sifter, add the flour. Mix well, then pour in the wine. Let the alcohol evaporate by cooking the wine for about a minute or two. Now, add the chicken broth along with the heavy cream and lemon juice. Stir well until incorporated. Season with salt and paprika. Mix again and simmer the sauce for about 2 minutes. Adjust the seasoning according to taste.
Step 4: To the sauce, add the spinach and cook for another 2 minutes or until wilted.
Step 5: Place the chicken back to the skillet. Put the lid on and cook the chicken breasts for 2 to 3 minutes (if using thin) or 5 to 7 minutes (for thick cut).
Step 6: Remove from the heat when done and serve the chicken with the sauce right away. Enjoy!
