CHICKEN AND POTATOES WITH DIJON CREAM SAUCE

Juicy chicken and tender potatoes in a rich, buttery sauce. Your dream meal after a tiring day. A delicious and satisfying one-pot dish to keep.

Ingredients

3 medium boneless skinless chicken breasts

2 tsp Italian blend seasoning OR Herbs de Provence

salt and pepper to taste

2 tbsp butter

2 tbsp olive oil

1/2-pound baby potatoes halved or quartered as needed (they should be no large than 1-inch pieces)

Dijon cream sauce:

1 tbsp butter

1 tsp minced garlic

1 c chicken broth I used low sodium

2 tbsp Dijon mustard

1 c heavy cream

1/2 tsp salt, or to taste

1/4 tsp cracked black pepper, or to taste

HOW TO MAKE CHICKEN AND POTATOES WITH DIJON CREAM SAUCE

Step 1: Prepare the oven and preheat to 375 degrees F.

Chicken and Potatoes:

Step 1: In a large mixing bowl, add the potatoes and chicken. Stir until well mixed.

Step 2: Add 1 tablespoon of olive oil, Italian seasoning blend, salt, and pepper, then toss until the potatoes and chicken are well coated.

Step 3: Place a large skillet on the stove and turn the heat to medium.

Step 4: Add butter and 1 tablespoon of olive oil and allow it to melt/become hot.

Step 5: Add chicken on one side of the pan and potatoes on the other side. Cook for about 4 minutes.

Step 6: Turn the chicken and cook the other side for another 4 minutes or until brown.

Step 7: Remove the chicken and potatoes from the skillet and transfer them on a clean plate, then cover it.

Sauce:

Step 1: Add the butter in the same skillet and turn the heat to medium.

Step 2: Once the butter has melted, add the garlic and saute for 1 minute or until aromatic.

Step 3: Add the Dijon mustard and chicken broth. Stir until well mixed.

Step 4: Add the heavy cream, salt, and pepper. Whisk until well combined.

Assemble:

Step 1: Put the chicken and potatoes back in the skillet and toss until well mixed with the sauce.

Step 2: Place the skillet inside the preheated oven and bake for 15 to 20 minutes or until done.

Step 3: Spoon the sauce from the same skillet over the chicken and potatoes.

Step 4: Sprinkle fresh herbs and cracked black pepper on top.

Step 5: Serve and enjoy!
