Chicken Alfredo Lasagna Roll-ups

I made this dish by accident. I intended to use big pasta shells and stuff them with the chicken mixture but I only had lasagna noodles available. Then, creativity struck! And this wonderful Chicken Alfredo Lasagna Roll-ups was born. I’ve seen a lot of recipes similar to what I did so I knew it was going to amazing. This dish did not disappoint. It turned out incredibly delicious and a huge hit! Plus, this became one of the perfect freezer meals.

Ingredients

1 box lasagna noodles

3 cups cooked shredded chicken (2 large chicken breasts)

2 cups finely chopped broccoli (or spinach)

1 cup shredded cheddar

1 cup shredded mozzarella

1 teaspoon garlic powder

1 teaspoon pepper

1 jar Alfredo sauce

1/2 cup Parmesan cheese

How to make Chicken Alfredo Lasagna Roll-ups

Step 1: Shred the chicken breasts once cooked and set aside.

Step 2: Cook the lasagna noodles in a large pot of boiling water until al dente. Drain the noodles when done and lay on paper towels or clean towels to drain the excess water and cool.

Step 3: Place the chicken, broccoli, cheese, 1/4 cup of the Parmesan, garlic powder, pepper, and half of the Alfredo sauce in a bowl and stir to combine. Into the bottom of a greased casserole dish, spread a spoonful of Alfredo sauce around.

Step 4: Spread on one noodle a few spoonfuls of the chicken mixture, roll it up, and place it into the casserole dish seam side down. Repeat until you have 9 rolls in the dish and another 9 into a freezer-safe dish. Top the roll-ups in the dish with the rest of the Alfredo sauce and sprinkle with Parmesan. For the ones in the freezer-safe dish, cover them with plastic wrap and store them in the freezer for up to 3 months.

Step 5: Bake the roll-ups in a preheated 350 degrees oven for about 30 minutes, covered. Uncover and bake for another 10 minutes.
