These roll-ups are super fun to make. Great meal prep for a busy individual like myself. Made with a few easy-to-find ingredients, you can make this incredibly delicious dish any time! Ready the chicken in advance, cook, and shred, then set the noodles up late in the day. Make 9 stuffed roll-ups to bake immediately and another 9 that you can safely store in the freezer for up to 3 months.

1 box lasagna noodles

3 cups cooked shredded chicken (2 large chicken breasts)
2 cups finely chopped broccoli (or spinach)
1 cup shredded cheddar
1 cup shredded mozzarella
1 teaspoon garlic powder
1 teaspoon pepper
1 jar Alfredo sauce
1/2 cup Parmesan cheese
How to make Chicken Alfredo Lasagna Roll-ups
Step 1: Shred the chicken breasts once cooked and set aside.
Step 2: Cook the lasagna noodles in a large pot of boiling water until al dente. Drain the noodles when done and lay them out on paper towels or a clean towel to drain and cool.
Step 3: Combine the chicken, broccoli, cheese, 1/4 cup Parmesan, garlic powder, pepper, and half of the Alfredo sauce in a bowl. Stir well to combine. Into the bottom of a greased large casserole dish, spoon a little amount of the Alfredo sauce and spread it around.
Step 4: Spread a few spoonfuls of the chicken mixture on one lasagna noodle. Roll it up and place in the casserole dish seam-side down. Repeat until you have 9 rolls in the dish and another 9 in a separate freezer-safe dish. Top the roll-ups with the rest of the Alfredo sauce and sprinkle with Parmesan. For the freezer dish, cover it with plastic wrap and foil and store it in the freezer for up to 3 months.
Step 5: Place the dish in 350 degrees preheated oven and bake for about 30 minutes, covered. Uncover and bake for 10 minutes more.
