Ingredients
3 cups potatoes, peeled, boiled, and cubed
1 pound skinless smoked sausage
4 tablespoons butter
4 tablespoons flour
2 cups milk
1/2 teaspoon salt
1/4 teaspoon pepper
1/8 teaspoon paprika
1/2 pound Velveeta cheese cubed
1/2 cup shredded cheddar cheese
HOW TO MAKE CHEESY SMOKED SAUSAGE AND POTATO CASSEROLE
Step 1: In half, lengthwise, cut the skinless smoked sausage, then chop them into half-inch pieces. In a frying pan, cook the smoked sausage for about 15 minutes, turning often until slightly browned.
Step 2: Prepare the oven. Preheat it to 350 degrees F.
Step 3: In a 2-quart casserole, place the potatoes and cooked meat. Gently toss.
Step 4: In a saucepan, combine the rest of the ingredients except for the shredded cheese and paprika. Cook over medium heat, stirring until the cheese sauce is warm, melted, and smooth. When done, pour this over the potatoes and meat, then sprinkle with the shredded cheddar cheese. Lastly, evenly sprinkle the paprika on top.
Step 5: Place in the preheated oven and bake for about 35 to 45 minutes until the top is golden brown.
