This is a super cheesy and creamy shrimp and grits that are better than any shrimp and grits out there. It is a very comforting meal in a bowl with cheesy grits topped with tender shrimps in a little spicy cream sauce!

GRITS:
1 c. yellow cornmeal grits
2 c. water
2 c. low-fat milk
1 tsp Kosher salt
1 c. shredded white cheddar cheese
2 tbsp salted butter
SHRIMP & SAUCE:
1 tbsp butter
1½ lbs shrimp, peeled & deveined
4 slices bacon, chopped
3 cloves garlic, minced
1½ c. chopped onion
1/2 c. chopped green onions
1 c. heavy cream
1 tsp hot sauce
1 tsp cayenne pepper (or you can use less)
1/2 tsp Kosher salt
1/2 tsp freshly ground black pepper
1/4 c. chopped fresh parsley
3 tbsp cornstarch
1½ c. low sodium chicken broth
How to make Cheesy Shrimp and Grits
Step 1: Add the milk, water, and salt to a large pot over medium heat. Bring the mixture to a simmer, then stir in the grits. Keep whisking until they start to thicken. Continue cooking the grits for an additional 10 to 15 minutes, stirring often until thickened. Add the butter and cheese. Stir well, cover, and set aside.
Step 2: Cook the bacon in a large skillet over medium-high heat until crisp. When done, place the bacon on a paper towel-lined plate to drain.
Step 3: Add the shrimp to the same pan and cook for about 1 to 2 minutes per side. To a platter, transfer the shrimp when done and keep warm.
Step 4: To the skillet, add the onions and cook until soft. Add the garlic, stir, and cook for about a minute. Over the onions/garlic, sprinkle the cornstarch and continue to cook for another minute. Pour in the chicken stock, stir well, and cook until the sauce starts to thicken. Cook the sauce further until the sauce begins to thicken more. Then, place the shrimp back in the pan and cook for an additional 3 to 4 minutes, making sure not to overcook the shrimp. Lastly, add the bacon along with the green onions and parsley. Stir well.
Step 5: Onto a plate, spoon about 1 cup grits, and top with about 4 to 5 shrimps. Over the shrimps, pour about a cup of gravy. Do the same for the rest of the grist and shrimp. Serve right away. Enjoy!
