This is a superb meal that my family loves so much! A family-approved, rich, and creamy Cheesy Scalloped Potatoes and Kielbasa – the best comfort food in history!
Ingredients
1 tablespoon oil
1 – 14 ounces kielbasa – sliced and cut in half
1 medium sweet onion, sliced and cut in half
6 medium potatoes – peeled, washed, and sliced (I use a mandolin to keep thinness consistent – about 1/4”)
2 cups cheddar or favourite shredded cheese
WHITE SAUCE:
3 1/2 tablespoons butter
4 1/2 tablespoons flour
1 1/2 cups chicken broth
1 cup heavy cream
1/2 cup milk
1/4 teaspoon dried thyme
1/2 – 3/4 teaspoon kosher salt
1/2 teaspoon pepper
How to make Cheesy Scalloped Potatoes and Kielbasa
Step 1: Heat oil in a medium skillet over medium-high heat. Once the oil is hot, add the kielbasa and onions to the skillet and cook until the sausage begins caramelizing and the onion has softened, stirring often. Then, set aside.
Step 2: After peeling and washing the potatoes, slice them and keep the slices in cold water. If desired, you can par-cook the potatoes to reduce cooking time. Boil the potatoes for about 10 to 15 minutes.
Step 3: To make the sauce, melt the butter in a medium saucepan over medium heat. Add the flour to the melted butter and whisk until you make a paste. Continue cooking for a minute more to get rid of the flour taste. Gradually add in the broth, whisking every addition to make sure to remove any lumps. Then, add the cream, milk, and seasonings, whisking frequently until the sauce has thickened. Adjust the seasoning according to taste.
Step 4: Ladle enough sauce to cover the bottom of a 4-quart casserole. Layer half of the potatoes over the sauce followed by half of the kielbasa and onion mixture. Then, top with half of the cheese. Do the same layers ending with the rest of the cheese.
Step 5: Place in 350 degrees preheated oven and bake for about 45 minutes, covered with foil. Uncover and bake for another 40 minutes until the potatoes are fork-tender.
Step 6: Remove from the oven when done and serve alongside your fave veggies or a nice slice of crusty bread. Enjoy immediately!
