Cheesy Scalloped Potatoes

Prep Time: 30 mins | Cook Time: 1 hr 15 mins | Total Time: 1 hr 45 mins | Yield: 8 Servings

Made with Russet Potatoes and a creamy cheese sauce, this made from scratch side dish is perfect for all occasions or whenever the craving for comfort food!

Ingredients

4 Russet potatoes

1 tablespoon Olive oil

1/2 white onion, diced

3 cloves garlic, minced

2 teaspoons of salt

1/2 teaspoon pepper

Pinch nutmeg

4 tablespoons butter

4 tablespoons flour

2 1/2 c milk or heavy cream

2 c shredded cheddar cheese

Chives for garnish

How to make Cheesy Scalloped Potatoes

Step 1: Prepare the oven and preheat to 200 degrees C or 400 degrees F.

Step 2: Spray with cooking spray on the bottom of an oven-safe casserole dish.

Step 3: Wash, peel, and slice the potatoes into thin crosswise circles. I usually slice mine 1/8-inch thick.

Step 4: Place the potato slices in a large mixing bowl with cold water.

Step 5: Put a medium saucepan over the stove and turn the heat to medium.

Step 6: Add olive oil and allow it to become hot.

Step 7: Add the garlic, onion, nutmeg, salt, and pepper. Saute for about 5 to 7 minutes or until the onions are translucent and the garlic is fragrant.

Step 8: Add the butter and allow it to melt.

Step 9: Add the flour and whisk for 30 seconds or until well incorporated.

Step 10: Add the milk or heavy cream gradually. Whisk continuously until well blended.

Step 11: Add the 1 cup of shredded cheese and stir until well mixed.

Step 12: Drain the potatoes and use paper towels to pat them dry.

Step 13: In a 3-quart oven-safe casserole dish, add a thin layer of the cheese sauce.

Step 14: Place 2 slices of potatoes on top. Repeat the process until everything is arranged in layers.

Step 15: Sprinkle the rest of the cheese over the potatoes.

Step 16: Loosely cover the casserole dish with aluminium foil.

Step 17: Put it inside the preheated oven and bake for 1 hour and 15 minutes.

Step 18: Remove the cover and bake for 15 minutes more or until bubbly.

Step 19: Remove from the oven and sprinkle chopped chives on top.

Step 20: Allow the Cheesy Scalloped Potatoes to sit at room temperature for about 30 minutes.

Step 21: Serve and enjoy!
