Cheesy Kielbasa, Rice and Broccoli Skillet

A complete meal made in a skillet – extra cheesy and chock-full of flavour with kielbasa, rice, and broccoli sure will be your new favourite dinner. A breeze to make and so good, you’ll make this over and over again!

Ingredients

1/2 tablespoon olive oil

14 ounces Polska Kielbasa sliced on a diagonal

1 small onion diced

1 small bell pepper diced

1/2 teaspoon salt

1/2 teaspoon pepper

2 cloves garlic minced

1 cup white rice uncooked

2 c. chicken stock or broth

2 c. broccoli florets – bite-size pieces raw

2 c. shredded cheese divided (I used a cheddar blend)

How to make Cheesy Kielbasa, Rice and Broccoli Skillet

Step 1: In a large lidded skillet, heat the olive oil over medium-high heat.

Step 2: Once the oil is hot, add the kielbasa to the skillet and cook for about 3 to 4 minutes per side until brown. Using a slotted spoon, remove the kielbasa from the skillet and set it aside.

Step 3: In the pan, saute the onion and bell pepper until translucent. For more flavour, work the brown bits off the bottom of the skillet.

Step 4: Add in the garlic and cook for a minute more. To taste, season with salt and pepper.

Step 5: To the skillet, add the rice. Cook for another minute or two, stirring continuously.

Step 6: Pour in the chicken broth and bring to a boil. Adjust the heat to low. Cover the pan and continue to cook for another 15 minutes.

Step 7: Add in the broccoli on top of the rice. Cover the pan again and cook for 5 to 7 minutes more until the rice is tender.

Step 8: Add in the kielbasa and a cup of cheese. Stir well.

Step 9: Sprinkle the rest of 1 cup cheese on top. Cover the pan and allow it to sit for another 2 to 3 minutes to melt the cheese.
