Cheesy Ground Beef and Cauliflower Rice Casserole

This is a pretty easy and quick casserole you can make any time. It’s packed with fresh spinach, beef, and cheese combined with cauliflower rice, then baked to melty goodness! A guaranteed family-friendly meal that’s low-carb and keto.

Ingredients

1 lb lean ground beef

1 tbsp olive oil

1 small yellow onion, diced

3 cloves garlic, minced

1 tsp Italian Seasoning

1 package (10 oz.) frozen cauliflower rice, cooked following the package directions

6 oz. fresh baby spinach

1 c. sour cream

½ tsp sweet paprika

½ tsp dried basil

2 to 3 tbsp milk, if needed

1 tbsp butter

8 oz. shredded Italian blend cheese, or any other shredded cheese you prefer

Salt and pepper, to taste

How to make Cheesy Ground Beef and Cauliflower Rice Casserole

Step 1: Prepare the oven. Preheat it to 375 degrees F.

Step 2: In a large 12-inch skillet, heat the olive oil on medium-high heat. Once the oil is hot, add the onions to the skillet and cook for about 2 minutes. Add the garlic, stir, and continue to cook for additional 20 seconds.

Step 3: To the skillet, add the ground beef and sprinkle with Italian Seasoning, paprika, salt, and pepper. Cook the beef, breaking the meat into pieces using a wooden spoon until entirely browned.

Step 4: Depending on the size of the skillet you are using, you might need to add the spinach in batches, stirring often for about a minute until wilted. When done, remove from the heat, then drain the liquid off the skillet. Set aside.

Step 5: Combine the cooked cauliflower rice, sour cream, butter, and dried basil in a 9 x 13-inch baking dish until completely mixed and creamy. You can stir in more milk if the sour cream and butter are not melting completely.

Step 6: To the baking dish, add the prepared beef mixture. Stir until blended, then top with the shredded cheese.

Step 7: Place the baking dish in the preheated oven and bake the casserole for about 22 to 25 minutes or until bubbly and the cheese has melted.

Step 8: Before slicing, allow the casserole to stand for a few minutes. Serve and enjoy!
