This is the perfect breakfast casserole with eggs, and sausage and topped with melty cheese and smothered in butter. Filling, super comforting, and a very delicious creamy casserole – this is seriously one to keep!

GRITS:
1/4 c. butte
3/4 c. quick-cooking grits
1 c. shredded cheddar cheese – divided
1/2 lb ground sausage – cooked and drained
1 tsp salt – divided
1/2 tsp thyme
1/2 tsp garlic powder
1/4 tsp pepper
3 c. water
EGGS:
1/4 c. milk
4 eggs
TOPPING:
1/4 butter – cut into pats
1 c. shredded cheese
HOW TO MAKE CHEESY GRITS CASSEROLE WITH BREAKFAST SAUSAGE
Step 1: Prepare the oven. Preheat it to 350 degrees. Ready a 1-1/2 quart casserole dish. Grease and set aside.
Step 2: After cooking the sausage, drain the excess grease and set it aside.
Step 3: In a large saucepan, bring 3 cups of water to a rapid boil over high heat. Then, stir in the grits and half tsp salt. Adjust the heat to a simmer and put the lid on. Cook for about 5 to 7 minutes, stirring the grits often. When done, take the pan off the heat.
Step 4: To the grits, stir in the butter until melted. Then, add 3/4 c. shredded cheddar cheese and mix well.
Step 5: Next, add the cooked sausage and the rest of the salt and seasonings. Mix well and set aside.
Step 6: To a bowl, beat the eggs and milk. Into the preheated skillet, pour the eggs, and scramble until just half cooked. Into the grits mixture, add half of the cooked eggs and stir well.
Step 7: Into the prepared casserole pan, pour the grits/eggs/sausage, and top with the rest of the butter. Place in the preheated oven and bake for about 25 to 30 minutes or until the top is lightly browned.
Step 8: Remove from the oven and sprinkle the casserole with the shredded cheese. Continue baking for another 3 to 5 minutes or until the cheese has melted.
Step 9: When done, allow the casserole to sit for about 5 minutes, then serve. Enjoy!
