Cheesy Corn Fritters

These cheesy corn fritters are a great side dish to any meal. You can whip these up in minutes using just pantry staples. The combination of the crispy edges and soft centre of these fritters is beyond amazing! Every bite will hook you to grab another and another. Serve these fritters garnished with a dollop of sour cream, and watch your family devour these until it’s all gone!

For this recipe, feel free to use canned or frozen corn. Although, I recommend using fresh corn, especially in the summer, where fresh corn is abundant. But if not available, just use canned, and it’s equally amazing!

These are the best corn fritters I’ve had! When I first tasted these fritters, I know these are going to be part of my family’s favourite, and I was not wrong! Also, whenever I have guests coming over, and I need something easy and quick, I just whip these corn fritters up. This is another amazing recipe that’s incredibly simple yet guarantees an impressive result!

INGREDIENTS

1 tbsp oil

2 c. of corn

1 Egg

1/4 c. cornmeal

1/4 c. all-purpose flour

1 green onion (chopped)

1 tsp smoked paprika

1 handful cilantro (chopped)

1 tbsp lime juice

1/2 c. grated Parmesan, or cheese of your choice

Sour or heavy cream, for garnish

Salt and fresh cracked pepper, to taste

How to make Cheesy Corn Fritters

Step 1: In a large bowl, place the corn, cornmeal, flour, paprika, egg, Parmesan, green onion, cilantro, lime juice. Mix well until blended. If the mixture turned out too dry, add some splash of water.

Step 2: In a pan, heat 1 tbsp oil. Once the oil is hot, add a spoonful of the corn mixture to the pan. Form it into a patty and cook for approximately 4 minutes on each side until golden brown.

Step 3: Serve the fritters garnished with a dollop of cream. Enjoy!
