Enough stressing over what to prepare tonight. Try this easy, quick, and super delicious Cheesy Chicken Quesadillas. A simple dinner that is packed with flavour and fun. Add your favourite topping and enjoy every bite!
Ingredients
3 boneless, skinless chicken breasts, cut into small pieces
2 c. chopped onions
1 green bell pepper, chopped
2 tablespoons vegetable oil
1 teaspoon taco seasoning
1 teaspoon garlic salt
1 teaspoon cumin
1/2 teaspoon pepper
1/4 teaspoon red pepper flakes
4 ounces can dice green chillies
2-3 c. Monterey Jack cheese, shredded
2-3 c. Sharp cheddar cheese, shredded
8 flour tortillas, soft taco size
2 tablespoons butter, divided
How to make Cheesy Chicken Quesadillas
Step 1: In a frying pan or large skillet, heat the oil over medium heat.
Step 2: Once the oil is hot, add the chicken, onions, and bell pepper. Stir in the taco seasoning, garlic salt, cumin, pepper, and red pepper flakes. Cook everything until the chicken is completely cooked and the onions are translucent.
Step 3: Into the pan, add the diced green chillies. Stir well until incorporated and continue to cook for a couple of minutes more.
Step 4: Melt a tbsp butter in a different frying pan. Once melted, add a tortilla into the pan. On one side of the tortilla, add the chicken mixture, top with the cheeses, then fold the tortilla over.
Step 5: Do the same for the other tortilla.
Step 6: Cook the tortillas over medium heat until brown. Turn the tortilla over and continue to cook the other side.
Step 7: Once cooked, transfer the tortillas to a plate.
Step 8: Into the same pan, add the remaining 1 tbsp butter. Do the same process with the rest of the tortillas and chicken mixture until you make 8 tortillas.
Step 9: Before serving, cut the wedges and top with your preferred toppings such as sour cream, green onions, cilantro, and/or avocado.
Note:
For this recipe, you are welcome to use either Rotisserie chicken or shredded chicken.
