This is a hefty one-pan meal with a cheesy rice bake full of chicken, broccoli, and cheddar. A wonderful dish with an amazing combination of flavours that will make you drool. A winner dinner with everything you love in one.

INGREDIENTS
1 tablespoon extra-virgin olive oil
1 cup small yellow onion, chopped
2 cloves garlic, minced
1 pound boneless, skinless chicken breasts, cut into 1” pieces
Kosher salt
Freshly ground black pepper
1 cup white rice
2 1/2 cups low-sodium chicken broth, divided
1 cup heavy cream
2 cups broccoli florets
1 cup shredded cheddar
1/4 cup Panko bread crumbs
How to make Cheesy Chicken Broccoli Bake
Step 1: Heat oil in a large oven-safe skillet over medium-high heat. Add the onion to the skillet once the oil is hot and cook for about 5 minutes until soft, stirring. Add in the garlic and cook for a minute more until aromatic. Add the chicken. To taste, season with salt and pepper. Continue to cook for another 6 minutes while stirring occasionally until golden.
Step 2: To the chicken in the skillet, add the rice, heavy cream, and a cup of broth. Stir, bring to a simmer, and cook for approximately 15 minutes until the rice is tender. Pour in the rest of the 1 1/2 cups broth along with the broccoli and cheddar cheese. Continue to cook for additional 10 minutes until the broccoli is tender and the cheese has melted.
Step 3: Ready the broiler. In the meantime, sprinkle bread crumbs into the chicken mixture and season with salt and pepper. Place in the broiler for about 2 minutes until golden and crispy.
