Cheesy Broccoli Stuffed Chicken Breast

This perfect low carb recipe is loaded with cheese and broccoli mixture that your whole family will ask for over and over! A delicious meal that is so easy and quick to make.

Ingredients

1.5 pounds boneless skinless chicken breasts or 4 large breasts

Salt and pepper, to taste

1 tablespoon Olive Oil

1 teaspoon Garlic Powder divided

½ teaspoon Paprika

1 tablespoon Italian Seasoning

1 c Small chopped broccoli florets

1 c Shredded Cheddar Cheese

How to make Cheesy Broccoli Stuffed Chicken Breast

Step 1: Prepare the oven. Preheat it to 375 degrees F.

Step 2: Cut through the centre of the chicken to make a pocket for the stuffing. Do this step for the rest of the chicken breasts.

Step 3: Season the chicken breasts with salt, pepper, paprika, and Italian seasoning on both sides.

Step 4: Add the broccoli with shredded cheese and cream cheese in a mixing bowl. Mix well and season with a dash of salt and pepper.

Step 5: Stuff the chicken breasts with the mixture. Use toothpicks to secure the pockets.

Step 6: In a large ovenproof skillet, heat the oil over medium-high heat.

Step 7: Once the oil is hot, sear the chicken breasts for about 2 to 3 minutes on both sides.

Step 8: Then, bake in the oven for 15 to 17 minutes more. The chicken is done when a meat thermometer inserted in the centre reached 165 degrees F.

Notes:

Use cream cheese for a light and fat-free substitute or cheddar cheese.

You can use frozen broccoli in place of fresh.

And avocado oil instead of olive oil.

Storage:

Store leftovers in a container and place in the fridge for up to 5 days. When ready to serve, reheat in the microwave. Or freeze for up to 3 months.
