This packed of healthy ingredients casserole is the real deal! Perfectly delish made with protein-packed quinoa, fresh broccoli florets, and homemade sauce. My new favourite vegan and gluten-free casserole.

1 c. uncooked quinoa (my go-to is the Ancient Harvest)
2 c. water or low sodium broth (for cooking quinoa)
4 c. fresh broccoli florets
2 tbsp butter
1 1/2 c. chopped yellow onion
6 cloves garlic, minced
2 tbsp oat flour (all-purpose will work too)
1 c. milk (I used unsweetened almond milk)
8 ounces block of good quality cheddar cheese, divided
1 tsp sea salt
1 tsp ground pepper
1/2 tsp garlic powder
How to make Cheesy Broccoli Quinoa Casserole
Step 1: With non-stick spray, lightly grease an 8 x 8-inch square dish or casserole dish.
Step 2: Ready the quinoa following the package directions using water. You should have 3 cups of cooked and fluffy quinoa after. Then, transfer in a large mixing bowl.
Step 3: In the meantime, steam the broccoli until bright green and crisp-tender. This should take about 5 to 6 minutes.
Step 4: In a food processor with a shredding attachment, shred the cheese. Alternately, you can use a handheld grater.
Step 5: Prepare the oven. Preheat it to 350 degrees F.
Step 6: In a medium saucepan, heat the butter over medium heat. Once the butter has melted, add the onion and garlic. Cook for about 7 minutes until soft and aromatic.
Step 7: Whisk the milk, flour, garlic powder, salt, and pepper in a small bowl or measuring cup. Pour this into the saucepan with onions and garlic. Simmer for about 5 minutes while stirring until the sauce is thick.
Step 8: Take out of the heat, then quickly whisk in 2 cups of shredded cheddar until melted.
Step 9: Pour over the quinoa and broccoli the cheese sauce and toss to combine.
Step 10: Into the prepared baking dish, transfer everything, then top with the rest of the shredded cheese.
Step 11: Place inside the preheated oven and bake for about 15 minutes until the casserole is heated through and the cheese has melted, uncovered.
Step 12: Enjoy warm!
