INGREDIENTS
1 c. cottage cheese
4 large Eggs
3/4 c. butter, melted
1 medium onion, finely chopped
pinch of cayenne pepper
2 (8.5-oz.) packages cornbread mix
1 (12-oz.) package frozen chopped broccoli, thawed (you can chop it up finely)
1 1/2 c. shredded sharp cheddar
HOW TO MAKE CHEESY BROCCOLI CORNBREAD
Step 1: Prepare the oven. Preheat it to 375 degrees.
Step 2: Ready a 9 x 13-inch baking pan. Grease and set aside.
Step 3: In a large bowl, place the cottage cheese and eggs. Whisk well until combined.
Step 4: Add in the butter and whisk.
Step 5: Next, the onion and cayenne. Stir well until incorporated.
Step 6: Now, add in the cornbread mix, broccoli, and a cup of cheddar. Mix well until everything is incorporated.
Step 7: Into the prepared pan, transfer the batter and sprinkle the rest of the cheese on top.
Step 8: Place in the preheated oven and bake for about 35 to 40 minutes.
