Cheesy Amish Breakfast Casserole

This is a very comforting, hearty breakfast meal packed with bacon, eggs, hash browns, and three different kinds of cheese. Pretty straightforward and super easy to make with only a few simple ingredients. Everything you love about breakfast in one casserole that’s perfect for feeding a crowd, potlucks, and for the whole family.

A sure-fire winner, this recipe has been my go-to for years now and for years to come. Excellent as is but if you want to add or substitute the ingredients you surely can. This recipe is so adaptable, no doubt one of the best breakfast meals I’ve made, and I need not worry about leftovers even if I make two pans!

Ingredients

1 lb sliced bacon, diced

1 sweet onion, chopped

4 c. frozen shredded hash brown potatoes, thawed

9 Eggs, lightly beaten

2 c. shredded Cheddar cheese

1 ½ c. small curd cottage cheese

1 ¼ c. shredded Swiss cheese

How to make Cheesy Amish Breakfast Casserole

Step 1: Prepare the oven. Preheat it to 350 degrees F or 175 degrees C.

Step 2: Ready a 9 x 13-inch baking dish. Grease and set aside.

Step 3: Over medium-high heat, heat a large skillet. Once hot, add the bacon and onion. Saute for about 10 minutes until the bacon is evenly brown. Drain the excess grease and place the bacon and onion in a large bowl.

Step 4: In the large bowl with the bacon and onion, add the potatoes, eggs, Cheddar cheese, cottage cheese, and Swiss cheese. Stir until incorporated, then transfer this to the prepared baking dish.

Step 5: Place in the preheated oven and bake for about 45 to 50 minutes until the eggs are set and the cheese has melted.

Step 6: Remove from the oven and allow the casserole to rest for at least 10 minutes before slicing.

Step 7: Serve and enjoy!
