Rice Flour Batter
1 1/2 pounds chicken breast, cut into bite-size chunks
Seasoned Rice Flour
8 ounces Cashews
1/3 cup canola or vegetable oil
6 green onions, cut into 1/4” pieces
Spicy Soy-Sherry Sauce
SEASONED RICE FLOUR:
3/4 cup Rice Flour
1/8 teaspoon Paprika
1/8 teaspoon Ground Black Pepper
1/4 teaspoon Kosher Salt
1/8 teaspoon Baking Powder
RICE FLOUR BATTER:

1/4 teaspoon Ground Black Pepper

1 1/2 cup Ice Water
SPICY SOY-SHERRY SAUCE:
2 tablespoons red wine vinegar
1/4 cup soy sauce
1/4 cup Sherry Wine
1 tablespoon Sriracha sauce
2 ounces fresh garlic, minced
1/4 cup granulated sugar
1 cup Hoisin sauce
1/4 teaspoon Crushed Red Chili Flakes
TO MAKE CHEESECAKE FACTORY’S SPICY CASHEW CHICKEN
Step 1: Place the Seasoned Rice Flour ingredients (paprika, rice flour, baking powder, ground black pepper, and kosher salt) in a bowl. Mix well until blended.
Step 2: Add the batter ingredients (all-purpose flour, rice flour, ice water, kosher salt, and ground black pepper) in a separate bowl over ice. Stir well, keeping it cold.
Step 3: Combine the sauce ingredients (Sherry wine, red wine vinegar, soy sauce, granulated sugar, Sriracha sauce, minced fresh garlic, red chilli flakes, and Hoisin sauce) until well incorporated.
Step 4: Into the seasoned flour, dredge the chicken. Pour the batter into a large bowl with the chicken, then toss to coat.
Step 5: Heat the canola in a large pan or wok over medium-high heat. Add the pieces of chicken to the hot oil and sear until all sides are browned and crispy.
Step 6: Add the sauce and cashews into the pan along with the green onions. Toss and cook for 30 seconds to a minute more until the sauce has thickened.
Step 7: Remove from the heat when done and serve the chicken immediately garnished with sesame seeds, parsley, and crushed cashews. Enjoy!
